Hello rayadam... I have taken these pics at the mirador on rwy 25R approach At the early morning, when I park my car I take also from the parking but I need to walk 200 meters along the canal, if not you are above the aircraft on landing (Falcon 2000 M-IKEL for example).
For the Iberia MD88 you have an area who are on built. You can enter but you need to make quickly your pics because airport security say you : "Go away" or they talk at the Guardia Civil (Spain hard police).
On July, 26 the wind has changed and I go on 2 different areas... I will explain where I have gone when I will put my pics

Now let's go to rwy 07L due to the wind change...

Rayadam, to take pics on approach on rwy 07 you need to go at the hotel complex on way to Casteldefells. You need to turn at the Pilipinas and go to Viladecans way. Park your car on the small parkings and you can make your pics
If not, you can park your car at the airport parking but it is not free and go to the Terminal 1 with the bus. You have also the possibility to take your pics from the Cargo area but the aircraft are so far and you need a big lens
