There are now no views from landside at the terminal. On departure if you go airside asap, you will be able to see almost everything by walking along the gates. (If you are arriving international, you will most likely be bussed to the arrivals hall which might be helpful, but once through passport control, you will see nothing. The favoured spot for locals tends to be at the cargo area but this is a long way away if you have no car. The international pier can be seen from one of the airport service roads (turn right as you leave the terminal) - 5 mins walk. Security is tight here though - dont hang about - just see what you want and turn around. The General aviation area can be seen from the Long Term Car Park. Take the free shuttle bus outside the terminal and get off at stop 4. Walking over to the fence is unlikely to attract attention but again dont hang about - just see what you need then go back. If you do have a car and are driving to the cargo area (leave the terminal in the Edinburgh direction and turn left on the slip road at the first major traffic lights - signposted for cargo), watch out for aircraft parked on "Block 30" which is at the end of the secondary runway. These are often biz jets parked up for a few days. They are visible from the road to cargo.
It used to be possible to view all day from the nearby Royal Highland Showground car parks when there was not a show on but I've heard reports that this is/was discouraged nowadays.
The best spots outside the airport require a car. As PIK Flyer has said, without a car you will be a little limited.
Mail me off Group if you do intend getting a car and shall point you to another excellent spot abpout four mile drive where you can have a good day seeing everything. The Cargo Area as PIK Flyer has directed will clear up the General Aviation and the other Crash Gate west of Kirkliston to sit and get some great photos but both are outside the airport by some way.
Edinburgh is no longer a spotter-friendly airport. A pity gets some good stuff sometimes - Israeli Gulf on delivery last month.
