I've been at Madrid last week for a few days and besides the many Iberia-Air Comet-Pullmantur Air-Spanair-Air Europa-Swiftair etc., seen the following :

When you stay at the terminal, the spot to be is at the "Bulevard the Barajas" , an area with restaurants and shops at T2 departurelevel.
Next to a restaurant is a rest area with big windows, wherefrom you can see two parallel runways. When landing is occured, only the planes landing on the nearest runway can be read-off.
Departures are completely out of sight,and not all aircraft taxi alongside this part of the terminal (not Iberia and most short-haul aircraft).

From there you can't miss any peace of aluminium.
Main course of my trip was to log as much Iberia A340's as possible.
They arrive every morning mostly between 7 and 8, departure between 12.00 en 13.00. When you missed one : check the P2 carpark level 6 wherefrom the tails of the A340's can be read of, parked at T4. The best time to do that is before the heatwaves mess it up.
A tip : when you arrive at the airport and decide to spot from T2 departure, don't go straight through customs, but walk airside to the terminal 3. From here the two main runways can be overseen,but also every aircraft parked at T1,2 and 3. When out of customs, it's impossible to see the airplanes parked at T3.
By the way, logged 23 Iberia A340's out of 32 in those 2 days.
