In the morning I'll try bus stop (or whatever it is) on Phahonyothin Road for 21L approach, and around noon swing by the museum to collect stuff there (I assume I can photograph display aircraft inside).
From there taxi to terminal 1
Is photography ok inside of the terminal or is it like photographing at EWR where after 5 minutes you would have 10 police officers around you?

In the terminal you should have no problems.

On rare occasions spotters have been challenged, but as said, this is very unusual.
