I'll be in the Sing/KL/BKK in a few weeks with some time for spotting. Where is the best observation place for Suvaranabhumi? (spotting rather than photography). I spent many a happy hour on the observation terrace at Don Muang but the one at Suv hardly allows you to see out, nevermind see the aircraft. I'd assume hanging round the fences would bring the boys in brown to you pretty quickly? I've seen the link to Queens Garden Resort Hotel which looks quite useful if you have a RadarBox but I e-mailed them last year and got no reply.
It has information on spotting places where you can monitor the landing traffic. By the way, don't spot on the perimeter road that goes around the airport. Police will sent you away very quickly.
I wouldn't even bother with the official viewing gallery. It's up perched high in the main check-in hall and you actually have to bend over to see out of a minimal opening onto the North facing parking area. Due to the angle all you are likely to see is the odd tail-tip if you are lucky. The area is also right next to the meditation area and to be honest it would be disrespectful to spend time here. I suspect that they had an observation area in the plan but couldn't make it fit with the rest of the (rather good in my opinion) building design. But they stuck it on anyway. You'd have more fun in the nearby sushi bar. No, that doesn't have airside views either.
